Integrate project-genie into Yennefer's ecosystem.config.cjs

Added project-genie application to ecosystem.config.cjs using the relative script path ./scripts/genesis.cjs and the required environment variables (GENESIS_LOOP, FORCE_MUTATION, ALWAYS_ON). Fixed the local genesis_journal.jsonl path in scripts/genesis.cjs to allow local simulation and updated .gitignore to avoid committing dynamically generated files.
