Docs: add self-driving inbox video, swap Slack screenshot for demo video

Changes

• Replaced the static Slack app screenshot on /docs/slack with the same Wistia demo video already used on the /slack product page.
• Added the new 90-second "PostHog Self-Driving explained" video (inbox + self-driving overview) to:
  • /docs/self-driving (overview, "See it work" section)
  • /docs/self-driving/web ("Your inbox" section)
  • /docs/self-driving/inbox (intro)

Why

These pages described the inbox and Slack app in text/screenshots only. Both pages already had a demo video available elsewhere on the site, so this surfaces it directly in the docs where readers are trying to understand the feature.
