Add ...args rest param to set() mock so it accepts EX/ttl options. Add keys() method to test Redis client using regex pattern matching. Closes StellarDevHub#971

Fixes Redis mock type errors in
token.service.tsby updating the test Redis client inbackend/src/utils/redis.ts:...args: any[]rest parameter to theset()mock method to properly accept EX/ttl options (resolves TS2554)keys()method to the test Redis client using regex pattern matching for glob-style patterns (resolves TS2339)Closes #971
