This PR updates the docs to describe how to have more than a single node Kafka cluster, by swapping the strimzi install example resource used.

It also updates the manual install commands to account for the large size of the resources failing with kubectl apply.

The changes look good and I got a 3 node cluster running locally (albeit by cloning the repo and applying locally rather than via the url).

One thing I wonder is if we should suggest using higher cpu and memory values in minikube if running a 3-node cluster? I ended up running out of cpu initially causing pods to fail. It worked with 4cpu and 10gb for me
